Healthy Berry Bread


I am so loving this new cooking hobby I'm picking up, it's just a lot of fun. The scale is not appreciating it too much, so in an effort to justify my baked goods love, I decided to go to Winco and buy some healthy cooking flours. I'm not sure about health nutrient wise, but I know there's some good fiber in some of the different flour types.




1 cup whole wheat flour
1 cup flax seed
1/2 cup all purpose flour
2 eggs
3/4 cup brown sugar
1/4 cup white sugar
1 cup canola oil
1-2 cups of mixed berries (I bought the mixed frozen berries from Winco)
1 tbsp baking soda
1 tsp of salt
1 tbsp vanilla essence


  1. Preheat the oven to 350°. Butter and flour a 9-by-5-inch loaf pan. In a medium bowl, whisk the flours with the baking soda and salt. In another bowl, whisk the wet ingredients. Stir the into the dry ingredients, fold in berries
  2. Scrape the batter into the prepared pan and bake in the center of the oven for about 50 minutes, until the bread is golden and a toothpick inserted into the center of the loaf comes out clean. Transfer the pan to a rack and let cool for 15 minutes, then turn the bread out onto the rack and let cool completely. 
  3.  (Optional) Dust the top with confectioners' sugar, cut into slices and serve.
*You can wrap the bread in plastic and refrigerated for up to 1 week.
